Before you begin, we highly recommend using a kitchen scale for the best results.
For the best results, avoid using baking powder. Dough that rises during baking may cause the details on your cookies to disappear.
Step 1 :
Start by mixing 75 g of sugar, vanilla sugar, pinch of salt, egg and your chosen flavouring until well combined. Choose a non-liquid flavouring whenever possible to avoid having to adjust the amount of flour later.
Step 2 :
Next, add 75 g of butter, cut into small pieces, and continue mixing.
Step 3 :
Gradually add 220 g of flour in two additions and mix by hand until a smooth, even dough forms.
Step 4 :
Finally, roll out the dough to a thickness of 4–5 mm (3/16 inch) on a silicone baking mat and lightly dust the dough with flour. You can also use a rolling pin with adjustable rings to achieve an even thickness and perfectly uniform cookies.
Note: A silicone baking mat helps keep the dough in place when you lift the cookie cutter and avoids having to transfer your cookies from the worktop to a baking tray. By rolling out the dough directly on the baking mat, your cookies can go straight into the oven once they have been cut.
How to Use Your Cookie Cutters with Our Cookie Recipe
⚠️ Lightly coat your cookie cutter with flour before each use to prevent the dough from sticking. Then press it gradually into the dough.
If your cookie cutter is difficult to remove, your dough may be too soft, too rich and/or too thick. Depending on the type of flour or butter used, you may need to dust the dough with flour and roll it out again.
💡 Tip: Gently twist the cookie cutter a few degrees from side to side while gradually pressing it into the dough to help define the details clearly.
Final step:
Bake for about 15 minutes at 180°C / 350°F. When the edges are lightly golden, they're ready!
Leave to cool for a few minutes, then enjoy!

Bonus: Chocolate Ganache for Filled Cookies
If you'd like to make Filled Cookies with homemade chocolate ganache, it couldn't be easier.
First, break the chocolate into small pieces and place it in a heatproof bowl over a bain-marie. Stir gently until melted. Meanwhile, heat the cream until it just reaches the boil.
Once the chocolate has completely melted, add the hot cream in two additions and mix until the ganache is smooth and glossy.
Leave the ganache to cool at room temperature or in the refrigerator until it thickens slightly. Stir occasionally and check the consistency.
Once the ganache reaches a spreadable consistency, fill your cookies using a piping bag or a small spoon. Place a little ganache in the centre of the bottom cookie, then top with the second cookie and press gently so the ganache spreads evenly.
Finally, leave to set at room temperature, then enjoy!
