MAKES ABOUT 30 SPECULOOS COOKIES

  • 200 g all-purpose flour
  • 150 g brown sugar
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp four-spice blend
  • 1 tsp baking soda
  • 70 g softened butter
  • a pinch of salt

Before you begin, we highly recommend using a kitchen scale for the best results.

Step 1 :

Start by thoroughly mixing the brown sugar, cinnamon, four-spice blend, baking soda and salt with a silicone spatula.
This first step helps distribute the spices evenly throughout the dough for a perfectly balanced flavor after baking.

Step 2 :

Gradually add 70 g of softened butter, followed by the egg, mixing until smooth and well combined.
The butter should be soft but not melted to ensure the dough remains easy to work with.

Step 3 :

Add 200 g of all-purpose flour and mix first with a silicone spatula, then finish mixing by hand until a smooth, pliable and slightly firm dough forms.

Step 4 :

Finally, roll out the dough to a thickness of 4–5 mm (3/16 inch) on a silicone baking mat and lightly dust the dough with flour. You can also use a rolling pin with adjustable rings to achieve an even thickness and perfectly uniform cookies.

Note: A silicone baking mat helps keep the dough in place when you lift the cookie cutter and avoids having to transfer your cookies from the worktop to a baking tray. By rolling out the dough directly on the baking mat, your cookies can go straight into the oven once they have been cut.

⚠️ Lightly coat your cookie cutter with flour before each use to prevent the dough from sticking. Then press it gradually into the dough.

If your cookie cutter is difficult to remove, your dough may be too soft, too rich and/or too thick. Depending on the type of flour or butter used, you may need to dust the dough with flour and roll it out again.

💡 Tip: Gently twist the cookie cutter a few degrees from side to side while gradually pressing it into the dough to help define the details clearly.

⚠️ Leave a little space between each cookie, as they will puff up slightly during baking.

Step 5 :

Once you've cut out your cookies, chill them for 30 minutes.
This chilling time helps firm up the dough, prevents the cookies from losing their shape during baking and keeps the edges well defined.

Final step:

Preheat your oven to 180°C / 350°F and bake for about 15 minutes, until the edges begin to turn lightly golden.
Baking time may vary slightly depending on the thickness of your dough and your oven.

Let the cookies cool on the baking tray for a few minutes before handling, allowing them to firm up without breaking.
